Hi There Just started working with a new fondant from Patisfrance and its is so sticky and wet hard to work with. Placed lots of corn starch to dry it out and it now started cracking. not like satin ice.
Hope you can help me if you have any solutions for this or any of you tried this and had a better deal with it.
I've used ready-made fondants that are way too sticky when you take them out of the tub. I work in some shortening (about 1-2 teaspoons per pound, or more if needed) and some more powdered sugar, until it's the consistency I want. The PS will bring it up to consistency and the shortening will help prevent cracking.
