Help! I came up with this supper yummy blueberry bottom cake and my friend talked me into entering it into our county fair. I just found out it has to be submitted Sunday afternoon and will not be tasted until Monday Morning. The problem is it will not be refridgerated over night. I have been doing it with a cream cheese frosting and I wonder if anyone has a recipe that doesn't require refridgeration.
Thanks for the help!

I think it will be fine - does the recipe have butter in it also? If it has a nice amount of sugar that should help it too - also, make sure you deliver it nice and cold so it will remain cold for a longer period of time, versus if you delivered it fresh from your kitchen. I don't think one night would be a huge deal, in my opinion.

Thanks! I did deliver it close to frozen. I put it the deep freeze for an hour before taking it. The cake received a blue ribbon and best in show! Thanks for the advice.
