I'm making chocolate fondant following a recipe by Rose Levy Beranbaum, however I'm finding that it keeps cracking as I knead it??? I tried adding more water (just a few drops at a time as per her recipe), and I've tried adding a tiny bit of shortening at a time as well but I'm not getting anywhere!!! I don't know what else to try, help!!!! Any and all help is very much appreciated, thank you
Similar thing happens to me when I knead chocolate fondant. In order to roll it and to avoid cracks or breakage, I place it between two sheets of wax paper and apply the rolling movement on top of the paper. In this way, I can roll it very thinly and completely smooth.
