I am looking for a light and fluffy white cake. It's for a smash cake for a 1 year old. All my recipes are dense cakes. I have tried looking on here under recipes but I can't seem to find any. Please help the cake is for July 16

This is very slightly yellowish in colour but is light fluffy and yummy...

The flour is plain flour with no raising agents - the whisking incorporates enough air to not need raising agents in the cake. Whisk it until quite thick and can hold the figure of 8 if you "draw" it with the beaters.
Hope that makes sense, this is a cake I grew up with my mother making and now make it myself.
