Hi ladies! I am making my first wedding cake and she wants a meringue frosting like this one: Image. Do you have any tips for me making this so it lasts the whole wedding?

Would it be better for me to have it completely frosted the day before and keep it in the fridge all night to harden up?

The weather is supposed to be 75 - 80 with zero humidity.

Any tips you have would be great! Oh, I'm doing 2 tiers, a 12" and an 8". Thank you!

It should last. Add some cream of tartar to the meringue. Are you making it similar to IMBC without the butter? Mine lasts forever like that. I do refrigerate after about a day, but it holds up well.

Wedding cakes in the Philippines traditionally used marshmallow icing before rolled fondant arrived ..

Maybe I can help you, if you tell me your recipe tocompare with mine. I usually decorate my children cakes with merengue.
