I usually wrap in cling wrap after baking, then freeze over night....it always gives me moist cakes. My cake for this weekend has a couple layers that won't fit in my freezer. Should I wrap and put in refrigerator?

fridge will be fine. Do you brush a simple syrup on your layers?

Counter is better that fridge for one day, the fridge will work to dry out your cake.
