If I cover a cake with buttercream and fondant on Monday, and cake is not served until Thursday, will the cake be ok ? AND if so, should I refridgerate it or keep out? I'd rather keep out,,but whatever will keep it from molding or getting bad. Thanks so much!

Yes, it will be fine. Room temperature is also OK unless it's really hot (when you run the risk of melting buttercream & filling ridge issues)

Depends on your filling but my cakes are usualy around 3 days old by the time they get eaten and I have never had any negative comments, once because of a mix up a suprise birthday cake was 6 days old and I was convinced it wouldn't be great but it was really lovely, evryone was raving about how lovely it was.You couldn't leave it that long for cream cheese obviously.

You can brush on simple syrup to your cake layers to help w/ any dryness that may occur.
