My buttercream is light and fluffy, which tastes great, but it always has bubbles when I try to smooth it out. Any suggestions?
Be sure your buttercream completely covers your paddle in your mixer so that while its mixing, no gaps form around the edges of the mixing bowl. Then let it mix for 10-15 minutes and it should get rid of the air bubbles.
You are mixing to much air in to your buttercream. I have great luck with mixing up my icing one day then the next just placing back into my mixer and using the paddle attachment stir on the lowest setting to knock out the air bubbles.
