Me and my partner have just got into cake decorating and have been trying to make some flowers with flower paste. We tried it first a couple of weeks ago with no problems. The last few times we have used it, I have been fine, but when my partner kneads/uses the flower paste (both the paste and her hands are dry) within a few seconds her hands are wet and so is the paste. It has been a bit humid recently but we cant think of any other reason to cause this. So is it the humidity or are we doing something else wrong? Thanks.

It's the humidity, most likely. If you're making your paste from scratch, you might try adding a little less liquid or a little more sugar, or about a teaspoon of tylose.

I use Nicholas Lodge's gumpaste recipe and it doesn't seem to be affected by humidity like fondant, or like Satin Ice gumpaste.
