I read and see some people freeze cookie dough and place in fridge, so if this sounds stupid please excuse my lack of brains tonight... but once I cut them out place on a baking sheet can I place in fridge until morning to bake them?

Thanks

Yes, that works fine. If you want to stack lots of them up to bake tomorrow, use two sheets of waxed paper between each layer.

I do it in advance too. My kids like to have their friends over to do cookies, and it helps limit the mess (well, a little bit) if I can make the dough and do the cutouts the night before. It also cuts down on kids munching the cookie dough.
