I made some mmf since it's way cheaper than buying premade and also because I hate the taste of premade, the consistancy seems fine but then it keeps sticking to the mat and sticking to my hands and it also took a ton of coloring to color it black, is this the norm? Or is there an easy way to fix it? What should have taken me 20 mins has taken me 2 hours!

Too much coloring can cause fondant to change textures. I like to make a chocolate mmf and then I don't have to add quite so much gel color. Keep your hands and counter in a layer of shortening, this will greatly help w/ the sticking. Keep kneeding in powdered sugar and crisco until you have your desired consistancy. Best of luck you you. =)

Thanks, will the crisco make it take longer to dry?

Work in a little corn starch! it will help with the stickyness of adding so much gel color.
