Hello,

A local cupcakery in my town makes a chocolate fudgy frosting that keeps it's shape on the cupcake, but is very smooth and doesn't crust. It's very delicious and I'm dying to find a copycat recipe. It kind of has the consistency of store bought chocolate frosting, but tastes way better.

I haven't found any online that seem to fit the bill, but I wondered if any of you have any ideas on what ingredients might make a frosting be more fudgy instead of light and whipped like buttercream.

Sounds like it might be a whipped ganache.

The Hershey's recipe from the can is a really good cocoa frosting. However it does crust - in that saran wrap wont stick to it etc. However, it retains a good frostingy consistency. It is good chocolate.
