How far in advance would you make a cake? I'm doing a fondant cake (for non-picky kids) and will cover it with buttercream first. Just wondering if baking the cake and covering with buttercream on Thursday (and then refrigerating/freezing) would be too early for a Saturday party....

Nope, that would be fine. I usually bake on Wednesday for a Saturday event.

You'll be fine. I have a cake due Sunday, but due to its size and scheduling with my little one, I'll be icing on Friday and starting to decorate and finishing up on Saturday.
