I love the flavor and the texture for of the smbc for my every day cupcakes. But I am not real sure about decorating with it as it seems too soft. Is there any way that I can stiffen it so that it might act like an american buttercream, can I add a little powders sugar to it or maybe meringue poweder to it? It does have a tendency to melt really easy. Any suggestions?
I would not add powdered sugar to it. I'm pretty sure it would ruin it's silky smooth texture.
The only way I've found to decorate with it is to make sure I keep putting my piping bag back in the refrigerator to firm up if it starts getting warm. Your kitchen should be cool as well. It can be temperamental. You could also consider using Royal Icing to make decorations that require some stiffness.
