My power was out today for 8-9 hours. I had 100 cupcakes with cream cheese icing in my fridge in boxes during that time. I keep a refrigerator thermometer in my fridge and for at least 4-6 of those hours the temp in the fridge got up to about 50-52 degrees. Power is back on and the fridge is cooling back down now but I wonder about the spoilage of the icing. I use the following icing for my cupcakes:

1 lb. high-ratio shortening
8 oz. unsalted butter
1 lb. cream cheese
1 tbsp salt
3.5-4 pounds powdered sugar

Help! My cupcakes are due tomorrow for my customer and I really need to know if these are still safe. I've done some research online on shelf life of cream cheese buttercream and I'm getting everything from it's not safe unrefrigerated after 2 hours to it's okay to leave it out for up to 3 days because of the sugar content. Anyone know what's the right answer?

I've left mine out before for more than a day and it was fine.

The amount of fat and sugar in your recipe will act as a preservative, so your cupcakes should be fine.
