New to the forums and new to cake decorating in general really. I am traveling to a vow renewal ceremony and would like to surprise them with cake! I doubt I will have a fridge in the hotel room (Travelodge ) but I could take a cool box and keep it at a low temperature at least.
I was thinking cupcakes, but it seems less hassle to transport a few cake layers and assemble at the party, but I am open to cupcakes since finding the boxes with segments that would keep them still. I would be leaving on the Saturday for the party on Tuesday and I'm worried about buttercream. Any suggestions? I would like to make brightly coloured icing for the cakes along these lines:

and plan on using candy moulds to make either chocolate or icing birds to decorate. Again, these can be kept separate to be assembled on the Tuesday so there's no issue with moisture. S, what would you use?
