Hi all,
I'd be very very grateful if you'd give me a few tips on the below questions..

Buttercream

a. How long does buttercream stay fresh for once its been made up?
b. Once its made up - should it be stored in the fridge
c. Once its been put on top of a cake/cupcake - how should they be stored and how long would they stay fresh for?

Sugarpaste

a. Once sugarpaste shapes have been made, how long can they be kept for?
b. What is the best way to store them (to stay edible)? Fridge, air tight container?

Any other tips relating to the above would also be gratefully appreciated.

Buttercream:

Will stay fine in the fridge for a week. If left longer, it can be mixed with fresh.

Covered cake can, but doesn't have to be, refrigerated. The icing will seal in the cake's moisture for 2-3 days.

Fondant:

Fondant takes a long time to dry so it'll stay edible out in the open for a week. If you're wanting to put the shapes on a buttercream cake you'll want them to dry a bit first because they'll absorb the icing's moisture & go limp.
