Obviously I lost my mind last night and left the eggs out of my double batch of sugar cookie dough. Do you think it's realistic that I could thaw the dough, put it back in the bowl and add two eggs????

yep, add the eggs. I have heard of eggless cookies, try a pan and see if they'll pass, if not add the eggs.

Well, they don't pass. I baked a few last night and they looked awful. Didn't hold shapes and were really thin. I'm going to add the eggs and see what happens!

Unfortunately I can't eat wheat so eating it is not an option. LOL!

Not sure if this will work. Tried this once myself and the eggs would not incorporate into the dough--they just kind of coated everything. Hope this works for you.

I just did that with sugar cookies! I wondered why they baked quicker than usual. As I was cleaning I saw the egg on the counter. The cookies came out delicious and crispy! Bake them and see what happens!
