Hello To All Experience Cake Decorators,
I am a newbie to cake decorating. I need advice on the Wilton Buttercreame Icing Recipe. I recently tried to put icing on my 2 layer cake, and the icing kept pulling away from the cake! Please let me know what I am doing wrong. icon_redface.gif

I use this recipe all the time. There was a post the other day with the same question about buttercream not sticking to the cake. The response was the cake is too moist. Look for the post for better resolution.

Your icing was to thick! Try thinning it down, 1 tsp at time until it's spreadable.

you might want to try a thin crumb coat layer first. take some of your icing, thin the consistency down a little with some milk (or whatever liquid you're using), then apply that to your cake. this should be a very thin layer, enough to lock in those crumbs. let that sit a while (on the counter or in the fridge) to crust/solidify. then apply your normal consistency icing on top of the crumb coat.
