Why Are Cakes Bought So Much Softer Than Homemade?

I would love to have a vanilla and white cake recipe that was soft and not came out dry or hard on the top. You buy cupcakes and they are so soft. I love to make scratch cakes and play all the time, however they are never the same as the bought cakes. I feel there is something they are putting in it that we don't. It must be a preservative. That's all I can understand. I would like to know people's feelings ASAP. Thank You, Dana icon_biggrin.gif
