Decorating With Real Roses?

I have a bride who wants real roses going down the side of her cake. She is not using a florist and is doing all of her flowers herself but she wants to give me roses ahead of time and have me place them on the cake so they will cascade down the side.

I have not used real flowers before. Do I just stick the stems into the side of the cake? (It will be fondant)

Do I have to wrap something on the part going into the cake for health reasons?

Any advise would really help! thumbs_up.gif

I wrap each stem with floral tape. Others dip the stems in chocolate.

foral tape is stickly, at least mine is that I use on real and artifical flowers.
Are we talking about a different floral tape? I wouldn't think you would want that stickiness in the cake? I may be missing something here.
