When you get your cake out of the oven and wrap it in plastic and foil......do you freeze or refrigerate your cakes? And, if you refrigerate......how long do you keep them in the fridge b/4 you frost and decorate?
My steps are: Remove cake from oven pans,
simple syrup treatment,
then wrap each torte layer in double layers of plastic.
Freeze anywhere from 1 day - 1 month.
My cakes have always stayed moist and good using these steps.
what ratio is your simple syrup?
I wrap my cakes in Saran wrap while they are still warm then a layer of foil and then I freeze them. My cakes are always moist. Something about wrapping them while they're still warm causes them to remain moist.
I level/torte while they're still slightly frozen, I find it much easier when they are firmer and it prevents them from tearing.
same here, i saran wrap then freeze. i've always heard that if you refrigerate your cakes they dry out, so i try and avoid that
