Size Of Cucakes

Hi,

I just baked up two dozen cupcakes with a mix, using regular sized liners. It filled each liner about 3/4 full, and after baking, they are way above the liner.

A lot of professional bakers (or more experienced than me) seem to have a lot less cake in each cup after baking. Then when they pipe on the frosting, it just comes slightly above the edge of the liner.

I know you all probably don't use mixes, but my question is, do you use the regular sized liners, or the larger ones? I like the presentation of the larger ones, but the price seems to be a lot higher too.

I offer mini, regular, and large....just depends on what the customer wants and will pay for.

Regardless of the liner size, some batters rise higher than others, so you can't always go by the "fill the cup 3/4 full" rule. I only fill my chocolate batter 1/2 way up and it rises to the perfect height. Through trial and error, you learn how much of each batter you need.

would anyone be able to tell me the sizes of ther regular, mini & large liners? I am in UK & sizes just vary from one store to another, it is so annoying, I have bought cupcake cases so many times that wont fit my trays, and other times muffin cases that are smaller then cupcake cases!

It's hard to say for a couple reasons:

1. Not all pans are the same size, so you really just have to find out which liners work best for the pans you have.

2. There doesn't seem to be a "standard" when it comes to liner sizes. They tend to vary slightly from brand to brand, and sometimes even within the same brand! I can pull out several packages of liners from the same brand....some will fit perfectly while others are too big. For me, this is especially true with mini liners. It's frustrating! Fortunately for me, if I get a package of liners that are too big for my pans, I just use them for cake truffles.
