Hi all, how do you decide on the size of cakes to use for the topsy's. I have made them in the past and have struggled with carving them, and i think its because of the size of tiers. I have heard that the cakes should be a 2 inch difference for the bottom one. Any help would be appreciated.

the one i made last night was 6, 9, 12" you can see the pic in my photos. its the elegant topsy turvy.

thank you pastrygirl, I was just going to ask the same question. It has been about a year since anyone ask me for one of these crazy cakes. Last one fro what I remember went together very well.. but I am stumped because they don't need that many servings. I was thinking of 12, 8, 6? maybe 5.
maybe styrofoam for the top tier.

by the way pastrygirls your cakes are fantastic.

Thank you! a 12, 9, 6, will serve about 45 people, minus the top tier if its a wedding. maybe being at a hotel we can afford to loose some cake, so this is about the smallest wedding cake we make. anything smaller in the room looks weird and you dont even notice it's in the large room.
