Whipped White Chocolate Ganache-Help!!!

Ugh, I screwed this up two times. I read the recipe, followed it to a T and the damn stuff kept separating and looking like cottage cheese. What am I doing wrong? Does anyone have a fool proof recipe for Whipped white chocolate ganache?

With white chocolate ganache you have to be careful and not over beat it or it looks curdled. It's quick to beat. I always use a hand mixer for it because a I can't walk away from it.

I've never done whipped white ganache, but in another recipe white choc is combined with butter over heat, and mine curdled (more than once!), I read that that's a sign you are over heating your chocolate. White being a bit more temperamental than dark or milk. Good luck!

I didn't think I overbeat it...It was still very runny before it got all lumpy looking.

I always chop my chocolate in a food processer until it is fine. Then heat the cream in the microwave until it is almost boiling and then pour it over the chocolate at let it sit for a minute or two. Then give it a whiz to blend and then chill for a few hours. That way the chocolate can't get overheated which can easily happen with white chocolate. I hope that helps.
