Do You Refrigerate Fondant Cakes With Ricotta/jam Filling?

I am making a cake for my niece tonight. I was told a strawberry filling. I have a recipe that is made with ricotta cheese, strawberry jam and powdered sugar...How do I handle this? Don't want to risk water spots from sweating, but don't want sick family on my hands...What do I do?
