i have to make wedding cookies cover with fondant wrapped in a cello bag.
how many days earlier can i make them to be fresh? 2 weeks is too long?

I don't like mine to be any more than a few days old, 4 or 5, but you can bake, decorate, bag and freeze them. I do it all the time.

Two weeks is too long to leave them on the counter, at least I wouldn't do it. I bake and freeze my undecorated cookies until one or two days before they are needed, then decorate.

I don't cover my cookies with fondant, I use sweet Annies cookie icing, but you'd probably have your cookies decorated a lot faster using fondant cut outs.
I have a caker friend who has her fondant cut outs made ahead of time so they'll be ready to go at the end of cookie baking time.
She puts her cut outs onto her cookies shortly after they come out of the oven, when still warm. She swears the fondant won't fall or peel off the cookies doing it her way, as the heat of the warm cookies makes the fondant adhere to the cookies so well. I have not tried this myself so cannot be a good judge on if it works or not. I can only add that I've never heard my friend say it did not work.

i think i will freeze them when i cut them and bake them 2 days before.

When tried to decorate warm cookies with fondant, it held for a while but later released the decorations.
