Two questions...

How many days in advance of delivery to you bake the cake?

What is the typical shelf life of a cake?

I usually make my cakes a few days to a week before decorating and delivery and freeze them. (wrapping tightly in Saran Wrap) I have no idea what the 'shelf-life' is because they are usually eaten that day or left over for only a day or two after that.

Most iced cakes at room temperature will start to grow mold at about 2 weeks because the icing is holding in the moisture. Uniced cakes don't mold, they just dry out.
