Problems With Sugarshacks Bc?

I am using the recipe I found on cc for the 6qt mixer and I can not for the life of me make it with out airbubbles!! What could I be doing wrong? I have watched her videos many times, trying to see if I am missing a step...don't think I am! Any tips for getting this icing nice and smooth in the 6qt? I love how it tastes just don't like that hers is perfectly smooth and mine isn't icon_sad.gif

that wont make the bc too soft? its already the perfect spreading consistency! icon_confused.gif

Nope. I often add a tablespoon or more of liquid. I just add some, incorporate it, and then check the air bubble status after a minute or two of beating. If there are still bubbles, I add some more and repeat.

The shape of the bowl actually can effect this. If your bowl is narrower and deeper you might need more ingredients and if it's shorter and fatter you may need less to make sure the ingredients cover the beater. I know the volume is the same but it's the position of the beater that can be effected. Is your bowl completely full to the brim almost to the point of overflowing? If not then you may need to increase the recipe.

I agree with the original poster though. If I don't add enough liquid mine doesn't perform just right. How much liquid depends on the brand of shortening and your humidity as well. Sweetex takes liquid differently than say crisco.

The brand of Hi-ratio I use requires less liquid than the recipe usually calls for. I just add liquid until I get the sucking sound like in the video.

wow, I had no idea there was so much to making BC! I will try adjusting the amount of liquid next time. The recipe is not going all the way to the brim like ya'll said it should, so should i be adding more shortening and sugar as well?? I am not quite sure how I would adjust it so that it fits...guess I have some practicing to do! I have the 6qt KA lift bowl. Its shorter and fatter I suppose than the tilt heads!

They do say when you overmix your bc it creates bubbles and maybe that was your prob.

If it's not over the top of the beater you need to add more shortening and sugar. I'd do it in 1/2 or 1/4 cup increments and liquid as needed. As for over mixing. Sharon let's hers run for 6 or 7 minutesso as long as the frosting is over the beater the mixing time shouldn't cause air bubbles.
