I am doing a strawberry shortcake for a baby shower next weekend and I'm looking for a whipped icing that will hold up to decorating and room temp (not too long) Any ideas? Also how do you smooth yours?

When I want a whipped icing I use Whimsical Bakehouse House Buttercream:

You could also use SMBC or IMBC, but I like the mild,light flavor of WBH. It's light & fluffy but also very stable, and it smooths beautifully with a hot spatula or bench scraper....just dip the tool in a pot of barely simmering water and dry it before smoothing over the cake.

I love this tip- usually I use a large glass filled with hot water and by the time I get to the middle of the cake the water has cooled down.
