I'm baking 36 ladybug cupcakes for my daughters teacher. The tops will be fondant ladybugs and I wanted to put the frosting inside the cupcake. I need the recipe (please) for a delicious white frosting that does NOT need to be refrigerated. The one I was going to use has an egg white in it.....I was told that particular one is "no go". I am looking for something light, fluffy and not too sweet. Quick to make is also a plus!!
A half-and-half concoction of buttercream and whipped cream (like Cool Whip or Bettercreme) makes a very tasty filling and it's nice and light.
