I am doing a filled sheet cake for Saturday. Cake will be filled and decorated on Friday, and it will be a 2 hr drive to the party on Saturday. My niece would like strawberries and cream filling......would it be better to do a stabilized whipped cream with the strawberries, or would it work out better to use vanilla pastry cream (homemade)? Not sure which one would hold up between the trip and sitting out at the party. Thanks!
why not do a "bavarian" and use half pastry cream, and half stabilized whipped cream? that way you get the best of both worlds and it should be fine to drive the 2hrs and sit out at the party.
