I haven't made the icing yet...My question is...How long does it take for frozen icing to defrost correctly?? I have a wedding on May 28 and my husband is scheduled to come home. By the time we get home it will be the morning of the wedding and therefore do not want to take it out prior! We will be 3hrs away for about 3 days to inprocess him back to the US. So. Should I risk it and have it frozen then brought out to try to defrost for 5 hrs? or make fresh frosting? Im thinking fresh but I need some input!(THese are for cupcakes btw...standards, buttercream, cream cheese and chocolate)

No problem. Freeze it in small quantities (like in piping bags) and it'll thaw in 10 or 20 minutes.

Or just don't freeze it at all. Should be fine for three days, in an airtight container.
