How Long Will The Cake Stay Fresh

Hi There

I was wondering if I can make a cake on a Monday, cover in fondant on a Tuesday and it will still be fresh by the Saturday. It's a family one rather than a customer I just don't think I'll have time later in the week.

I was thinking that once the fondant is on it then air can't get to it to dry it out. Has anyone tried this? It's a vanilla sponge cake.

Personally I wouldn't serving a cake that is 6 days old, nor would I want to eat one. For me the longest I will go until it is cut is 4 days.

Thanks for the reply. I managed to rearrange some stuff so don't need to bake it so early icon_smile.gif

There are some that do bake early and freeze the cake to pull out later in the week to decorate it. I don't currently have freezer space to do that myself, but it's always an option.
