How Much Would You Charge For Cross Cake To Feed 10 To 15?

Hey all, I have an upcoming order for the above and was wondering what I should charge. What would you charge for the above and what size cake pan would you use. According to sizing chart I think it should only be an 8" square pan, cut to make the cross or should I just use the Wilton cross moould?

What would you charge for all buttercream with normal buttercream filling?
What would you charge for fondant covered with the same filling?

You should charge your cost (ingredients + labor (time spent on cake * your hourly wage) + per-order overhead (including licensing fees, insurance, etc)) + 20-30%.

Probably in the $50-60 range for BC or $80-90 for fondant, but that includes commercial kitchen rent and labor in an expensive area (northern CA) as well as a significant amount of overhead. Your cost structure will be different, so my price may be either too low for you to make a profit or too high for your market.
