I'm making a chocolate cake with buttercream icing in between the layers and then I'm covering the cake with Wilton fondant. The problem is Im going on vacations May 14 and I will be back May 22. But I have an order for the May 21. Can I make the cake and delivered 7 days before the event and tell her keep it in the refrigerator? It will be the cake ok??PLEASE I NEED An ADVISE!!!!

No. You have to turn down the order, or find a substitute to make the cake and deliver it correctly.
