Hi All,

I am doing a three tiered minnie mouse cake this weekend and i just have a few questions....

1. I am crumbcoating the night before, should the cakes then go uncovered in the fridge or back in the freezer?
2. Should I put my fondant embellishments on before or after stacking the cakes?
3. Is it safe the stack the cake the day before (24 hrs) the event? I am using dowels.
4. Is the cake safe to stay out that night?

Whenever I crumb coat (usually on Thursday For sat. Delivery) I just put the cake right back in the fridge to settle overnight, the next day I cover all tiers in fondant dowel and stack then decorate. I like to stack then decorate because there's less of a chance of messing up bottom tiers's embellishments when adding top tier. However some prefer to decorate then stack it's pure preference and what you feel more comfortable doing. A fondant covered cake can be left out overnight in cake box as long as your fillings aren't perishable... Such as real fruit or whipped cream.
