I have to make a smaller 3 tier cake for pick up Tuesday night (they will be cutting and eating the cake on Wedneday evening). I have no time this week to spend a whole night making it so I was wondering if it is possible to bake the cakes tonight and freeze them and then ice and decorate them tomorrow night (monday) and leave each layer in sealed cake containers in the fridge Monday night until Tuesday night.
I don't want them to be dry come Wednesday night, but I also don't want to be up all night on Monday since I have to work in the morning and I won't be able to get started on them Monday night until 8pm or so.
Yes, you can bake today and freeze and then fill and ice tomorrow. However, unless your filling is perishable, I wouldn't put them in the fridge afterward. The fridge wil tend to dry them out.
