I am looking to buy a my first commercial oven and wondering if anyone has any recomendations on a certain brand or type.

Deck ovens (sometimes called pastry ovens) are great. Gas or electric is whatever your preference may be. Convection ovens have high wind issues. If you decide to purchase a convection oven, make sure the fan can be turned off or your cakes may get blown out the door.

I like Blodgett brand. But for my shop I just got two Hobart ovens. I was going to get Blodgetts, but the Hobarts are bigger and a very good brand also.

If you have a local restaurant supply place in town or even better, a used restaurant supply place would have used equipment and they can probably give you a lot of help.
