I have 3 cakes going out the door on Saturday. Every one of them will be covered in buttercream icing and covered in fondant. I'm wondering how long they can set out? I'm not very familiar with fondant but I was told it can't go in the freezer as it may crack. So I'm wondering if I'm going to need to decorate all 3 Friday evening for Saturday morning pick up? Any suggestions would be appreciated.
Most cakes will start to grow mold after sitting out for two weeks, covered.
You should have no problem leaving your cakes out at room temperature, as long as you aren't using a filling/icing that requires refrigeration.
