I am a newly registered cake decorator. I am very happy doing my little cakes here and there but have just been asked to do a wedding cake in November. Now, I know that is ages away but I am already freaking out. She needs the cake to serve 140 people, but they need to be tea & coffee sizes not dessert. What is the difference in the two sizes, is there a general rule for working out the sizes? is it just a half serve??
Also the cake has 3 tiers but they are the higher style ones, they look to me like double the height of a regaular pan height. SHe wants the top tier to keep, so the middle and bottom tiers must be tall, and big enough to feed 140 (tea & coffee serve) and she also doesn't want it to be one of those cakes that is the height of the bride.
