Buttercream (No Crisco) Storage

Does non crisco buttercream need to be refrigerated???

I feel like this question has been asked over and over again but I am asking again because my husband is getting his Servsafe certification and he insists that it needs to be stored @ 41 degrees.

I know I certainly don't have room in my fridge to store frosted cupcakes nor do I like refrigerating them, and I don't. But I wonder what people who have a business do.

When you say "non crisco buttercream", I assume you mean a crusting icing made with butter?

Check with your local health department, but most here consider crusting icing shelf stable and does not need to be refrigerated weather it's made with shortening or butter.
