Can Piping Gel Go Bad?

I had some (sealed) piping gel in my pantry for maybe a yr. I opened it and it was quite a bit darker than it usually is. I didn't see an expiry date anywhere. Can it go off?

It's like corn syrup... doesn't expire for a long time. I'm sure it isn't darker than what you remember it should be, it isn't clear, but an opaque amber color. Do you think it really turned DARK?

Just so there is no fuzzy green stuff growing in it, the piping gel is fine.
