I am putting royal icing on my daughters three tiered wedding cake. I always put glycerin in royal icing But wondered how much I should put in to make sure the icing could be cut easily without breaking into lumps. I will be starting to put the first coat on four weeks before the date, so that I can build it up and have flat covering.
