Any one have any thoughts on a Mickey Mouse Clubhouse design for a simple sheet cake without replicating it due to copyright laws??? Birthday cake is due in two weeks & i am clueless.... thanks!

The best you can do without violating copyright is to buy licensed Mickey Mouse cake toppers (or have the customer buy them).

Can you make the figurines out of gumpaste to look like them (but not exact)? Is that legal?

No. Even if it is not an exact replication, if it looks like the character, you will have a problem.
