Rules For Refrigerating Fillings

I'm making a red velvet cake with cream cheese filling and frosting. I'm covering it with MMF. I realize that the frosting and filling needs to be refrigerated and the MMF cannot be refrigerated. So how long is it ok for the frosted cake to sit out with the MMF covering it.

I also have a wedding cake to do in June and it will have fruit filling. Again, want to cover it in MMF. Is there a good rule of thumb for when these cakes can sit out covered with MMF?

MMF CAN be refrigerated with no problems.

There was a recent post that said to just put in in a cake box in the fridge and it will be fine. (never tried it so you might want to try to find the post)
