Bakers Pls Help! Crumbly Cake

Hi!! Hope someone here can help me out. I love my fudgy chocolate cake recipe, everyone does. I am hesitant to change it. Problem is that it is too crumbly. Almost everytime I bake it, it breaks, splits down the centre and is too crumbly. icon_confused.gif Is there anything I can do to "stabilise" it.
Here is my recipe. If anyone can assist me in adjusting my ingredients I would be so grateful. Thanks

250 grams butter
1 cup water
1/2 cup cocoa
2 cups sr flour
2 cups caster sugar
1/2 cup sour cream
2 eggs
1/2 teaspoon salt

First I combine butter, water and cocoa on stove top until melted. I sift all other ingredients into mixing bown and then add cocoa mixture., mix until smooth and then bake.

At what point does it break and split - during baking or when it's cooling?

Hi Jan,
Thanks, it's during cooling. When I invert. It also seems to occur when I use 12 inch or larger. I suspect it needs longer in the pan to cool. I usually leave it in at least 15 mins.
