My really good friend just got diagnosed with a gluten allregy and her bday is coming up! I feel so sorry for her as she LOVES cake! LOL I found this reciepe for Chocolate cake in the reciepe forum here and had a question:

What is ICING SUGAR and XANTHUM GUM???

Gluten Free Black Forest Cake
Ingredients
2 1/8 cups gluten free flour mixture
2 cups white sugar
3/4 cups unsweetened cocoa powder
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
2 teaspoons xanthum gum
3 eggs
1 1/2 cups milk
1/2 cup vegetable oil
1 tablespoon gluten free vanilla

2 cans potted cherries (cherry pie filling)

3 cups whipping cream
1/3 cup icing sugar

Oh and is Homemade Buttercream icing gluten free??

I use Crisco, Butter, Merigune powder, vanilla, butter flavoring, almond extract, orange extract, and powdered sugar
