I was wondering how far in advance I can make and ice a wedding cake.
I usually bake wedding cakes on Thursday for a Saturday wedding. I ice, decorate, and stack them on Friday, and deliver on Saturday. I have baked a cake for Saturday as early as Wednesday afternoon, but I personally would not bake any earlier than that unless you are freezing the cake. HTH!
If I were going to bake my cake before the wedding, I would bake on wednesday, torte and fill and crumb ice on thursday, and final coat and decorate on friday. I freeze all of my cakes now, so I rarely do it that way anymore, unless its a small cake. I bake my cakes a week or two ahead of time and wrap really well with plastic wrap and then foil. Then I take the cake out on wednesday night and let them thaw in their wrapper, and I do the same process as baking a couple of days ahead of time. Of course that is for a saturday wedding. The frozen cakes are so moist, alot of people are doing this now. Its very comforting to know that the cakes are all done and in the freezer, alot less stress.
