Are there any forums on shipping (mailing) cakes etc??

If you mail across state lines, you must have FDA approval. You can get the requirements from your state Dept of Ag. People mail illegally, but if you are caught, it is federal. You will have full separate commercial kitchen requirements. You must have FDA issued labels, recipes analyzed by their labs, registration with the Bioterrorism Act, a recall protocol in place, and federal documents showing all production for the time required by law. The penalties for not following the law are stiff. They will first get you for the lack of a production log on their form. That is a daily fine for as far back as the items' required log time. Not meaning to scare you, but the FDA is much tougher than local health departments. If your mailed item makes someone sick and they report it, you will have the feds knocking on yor door. My kitchen has met all requirements and I am waiting for the FDA rep to come through my part of the state for final approval. You need this approval to mail overseas too.
